Winter is hard.  Pandemics are harder.  Winter pandemics, oh dear!  

This Winter we are offering a wellness program that will support us in viewing
this particular pandemic winter as an opportunity to reflect, restore and reset.

We have partnered with Chinese Medicine practitioner, Kelli Taylor of Jade Path Healing Arts 
to guide us through a more ancient way of being, to help us center ourselves and to learn what truly nourishes us. 

So, whether you are looking for a fresh start, a dry January or a simple reset, our deliciously nutrient dense menu is deeply healthful
and gently motivates our body’s natural detoxification processes to balance blood sugar and hormone levels which reduces cravings
for the overindulgences that come with holidays and pandemics. 
 
Our menu highlights the diverse, phytonutrient rich bounty of our region’s farms and focuses on eating clean, whole foods
in a mindful way. After all the holiday zoom celebrations and quarantine fifteen, our goal is not to just survive this winter, but to thrive. 

Each week, we will offer seasonal provisions for self care and mindfulness including questions for reflection 
​that will bring you closer to understanding your constitutional nature so that with Spring, you will become renewed.

    BONE BROTH FLAVOR OF THE WEEK
    Bone broth is exceptionally healing. It is rich in minerals, protein and collagen. There is a reason why every culture on the planet has its own version. Try replacing a daily cup of broth instead of coffee for a nourishing start to your day. Lemon is very therapeutic for those who have eaten a high fat/protein diet. Its antiseptic, antimicrobial and mucous resolving action make it perfect for colds, flu and hacking coughs. It also increases the production of fluids in the body. Related to celery, parsley is high in vitamins K, C, and A as well as folate and iron to promote heart health and generally important for a strong immune system.
    NOURISHING VEGAN BROTH 
    Shiitake is beneficial to the stomach and to the immune system as it decreases both fat and cholesterol in the blood and helps the cleanse excesses from too much animal protein. Combined with kombu this gorgeous broth is moistening and cleansing. It's best to avoid kelp and seaweeds during pregnancy.

    The healing power of bone broth especially in winter can not be overstated. It is rich in minerals, protein and collagen and there is a reason why every culture on the planet has its own version. Enjoy it as a nourishing substitute for coffee in the morning, flavored as an afternoon pick me up or as here, poured over some of our favorite ingredients to give you a delicious and sustaining meal.
    Consider that our blood contains all the minerals and trace elements fo the ocean. Seaweeds are superbly mineral rich and just a little goes a long way. The naturally cooling salty flavor of seaweed detoxifies, softens hardness, moistens dryness, transforms phlegm and mucous conditions, alkalizes the blood and alleviates stagnancy. Mushrooms promote appetite, cleanse mucous in the respiratory system, decrease excess heat and fat levels in the blood. A range of mushrooms bolsters immunity in many ways. Note: Mushrooms can be too cleansing during convalescence. Long term Vegans should use mushrooms sparingly unless a specific mushroom is needed.

    Nutrient dense slow cooked stews and soups are easily digested, deeply nourishing and exceptionally hydrating. Mushrooms promote appetite, cleanse mucous in the respiratory system, decrease excess heat and fat levels in the blood. A range of mushrooms bolsters immunity in many ways. Note: Mushrooms can be too cleansing during convalescence. Long term Vegans should use mushrooms sparingly unless a specific mushroom is needed. Tomatoes are rich in lycopene, build fluids, encourages digestion and helps to detoxify the body in general. After digestion, tomato alkalizes the blood. In excess, tomato may aggravate arthritis conditions as it can affect calcium metabolism.
    The cold of winter makes shepherd's pie food for the soul. Lamb is warming and sweet to increase energy and improve blood production an is especially helpful for those who tend towards general weakness. Root vegetables are strengthening for all and potatoes harmonize the stomach, moisten the intestines and neutralizes acidic conditions.

    A member of the salmon family having the same rich color, steelhead trout has a beautiful delicate flaky flavor that is rich in omega-3 fatty acids which play a role in every organ and every cell. The cooling nature of Steelhead trout calms inflammation. Winter citrus fruits and fresh herbs brighten the flavor and provide additional vitamins A and C as well as antioxidants.
    The vitamin and mineral content in fennel is abundant and supports heart health, immunity, digestion and helps decrease inflammation. Rosemary is rich in antioxidants as well as vitamins, minerals, and iron to support circulation and strengthen the immune system. White beans are a great source of fiber, protein and folate to help regulate metabolism, promote development and growth of the body, brain and reproductive energy. Legumes are relatively drying so not ideal for those with deficient conditions.

    Wheat berries are packed with nutrients and high in protein and fiber.The addition of kale pesto and preserved lemon make this a delicious way to regulate blood sugar levels and support intestinal health.
    Parsley is exceptionally high in vitamin C (higher than in citrus in fact) and is a source of provitamin A and minerals all of which help to improve digestion and elimination, strengthen the adrenals and benefit the nerves. For those who are nursing, avoid parsley as it may decrease milk production. Polenta is low in fat and high in minerals.

    Brassica vegetables (cauliflower, turnip, kale, broccoli, brussels sprouts contain antioxidant and anticancer compounds well as sulfur which has antibiotic and antiviral characteristics. Hazelnuts harmonize the stomach, stimulate the liver and are high in protein.

    Beets stimulate the liver out of stagnancy, strengthen the heart, purify the blood, moisten the intestines and promote circulation. Ginger aids digestion and helps to break down the effects of excess protein consumption. Winter citrus is high in vitamin C to fight inflammation. Red onion is sweet, and helps to lower cholesterol and decrease mucous and phlegm.
    High in Vitamin A, winter squash supports digestion, reduces inflammation and improves the circulation of energy so it is effective for pain conditions. Miso is an alkalizing fermented food beneficial to a healthy gut microbiome. Sesame seeds are rich in Calcium, strengthens and nourishes the five yin organs. Black Sesame seeds are more strongly tonifying.

    High in fiber, sweet and bitter kale benefits the stomach and eases lung congestion. It is loaded with chlorophyl, calcium, iron and vitamin A. Avocado is rich in copper and a natural source of lecithin our brains love. The sesame-ginger dressing increases the digestive capacity of enzyme rich raw root vegetables in winter.

    With more than fifty varieties of lentils grown all over the world, these little powerhouses of fiber and minerals are beneficial to the heart and circulation and deeply increases vitality of the kidneys. Mustard seeds stimulate and strengthen digestion and help resolve mucous and phlegm.
    Barley is regulating for the stomach and strengthening and moistening for the intestines while also having a mildly diuretic effect.
